Our powdered San Francisco Sourdough Starter works well after much testing. Also when it is made up and chilled, it revives excellently as well.
However, I wanted to see if the frozen starter is viable.
Last week I froze 4 portions of chilled San Francisco Sourdough Starter in 300g pouches.
My intention is to take one of the pouches out of the freezer after 1 week, then every month for 3 months to check its viability.
I defrosted the first pouch overnight naturally, not using a microwave to defrost as it could kill some of the yeast cells.
I fed it for 2 days and found it to be effervescent!
I made a loaf with my Panasonic Bread maker as shown in the photos.
It was a good colour, well risen, crispy and light.
So 1 week frozen San Francisco Sourdough Starter is viable.
